After going to Costco and buying what seemed like five dozen bananas a week ago, I realized I needed to do something with them, as they laid turning blacker and blacker on my countertop. So I found a recipe and tweaked it, turned out REALLY good, so I thought I would share it with my favorite girlfriends!
2 cups mashed bananas (about 3-4 bananas yellow-black color)
1 cup sour cream
1/4 cup margarine/butter/ or applesauce for low fat option
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp nutmeg
1 tsp vanilla
1 tsp cinnamon
2 cups AP Flour
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
1. Preheat oven to 375 degrees. (you will cook bread for about 5 minutes at 375 then turn down for remainder of time about 30 minutes at 350 degrees.
2. Grease and flour (or option to sugar and cinnamon dust) 2 7x3 pans or 1 9x 13 inch approximately. Don't forget to grease the sides of the pan.
3. Combine bananas and sour cream and set aside
4. Cream margarine and sugar till smooth and beat in eggs one at a time. Stir in vanilla/nutmeg/cinnamon and banana mixture
5. Add flour/baking soda/baking powder and salt and stir.
6. Fill pan(s) about 1/2 or 3/4 way full to allow for rising.
7. Bake at 375 for about 5 minutes, then turn heat back to 350 for 25-30 minutes. depending on your oven, you may need more time. Check with knife or toothpick in the middle. When the toothpick comes out clean it's done!
Add ons:
Add walnuts to mix
Add topping of:
1/4 cup brown sugar
2-3 Tbsp Flour
1/2 tsp cinnamon
2 Tbsp melted butter
Add this topping before putting in oven (i didn't do this so i'm not exactly sure how this comes out...)
